Woolamai Mist

From a lookout above Moyarra Valley, the tip of the Strzelecki ranges tumbles down to the coastal plains around Woolamai and appears to point towards Phillip Island. The wooly, white rind on this sheep cheese reminds us of the sea mist and fog that often blankets the Woolamai area. Woolamai Mist has an evenly soft body which when ripe is almost like a paste or thick sauce in texture. When young it has a mild taste, developing into a lingering earthy, pepper aftertaste when fully mature. We make this from only the freshest pure sheep milk, in small batches to maintain consistency and optimal ripening age.
